Favorite Appliances

Cooking on the road for me is pretty simple. I don’t do a lot of intricate meals and so I’ve got a few go to cooking items that are my staples.

One is my Ninja Foodi that does just about anything that I could ever want to do except BBQ. On second thought I think my daughter has made BBQ wings with her Ninja. Really. this Ninja will do just about anything, and cleanup is quick and easy as there are very few pans that have been used. What I usually cook as they are easy and nutritious are soup: chicken tortilla, chicken noodle, zuppa, taco, and chili. I have also made enchiladas and lasagna. I make large batches and freeze them in smaller servings in Ziplock freezer bags (they lay flat so I can store more in my freezer.) That way I can pull one out, it thaws quickly, and I have dinner for a couple of days. If I get hungry for something besides soups more than likely the Ninja will be able to cook it. If, by chance it doesn’t I do have some pots and pans for my stove.

The second is my Dash egg cooker. With this cooker I can make little egg muffins or egg sandwiches (similar to Mcdonalds Egg McMuffin.) I mix up a batter or eggs, a little bit of milk and whatever else I want to add in (spices, veggies, etc.), pour it into the cups that are provided, close the lid and let them cook. I usually made enough for a week and store in the refrigerator, but you could make and put in the freezer or just make each day. It took some experimenting to see how full to fill the cups and how long to cook the eggs. I will admit that I did throw some away as I got distracted and forgot them, Opps! Although my kids will tell you that is an everyday thing when I am cooking which is why I like the Ninja so much, it is set a timer and the cooking is done by the machine (no fail!)
